Mango chickpea salad with orange dressing

I love simple recipes, especially when I cook for just myself. And nothing can be simpler than putting together a delicious salad. I usually throw in whatever I have at that moment in my refrigerator. I also bake some veggies if I plan it a little ahead of time. Toss some protein like lentils, tofu, handful of colorful berries, fruits, few seasoned baked veggies, some fresh greens, some nuts or croutons for crunch and a nice dressing, you pretty much have the formula for a healthy fullfilling salad.

If you think salads are boring, you should try it with this refreshing orange dressing. Orangy, sweet and salty, it hits all the right notes and elevates the dish. I love oranges and its probably one of my favorite fruits. I usually try and make this dressing whenever we get oranges at home. I use the pulp in the dressing and reserve the peels for my favorite Orange peel Vathal Kuzhambu

I remeber my husband telling me that when he had come to the US to study for his masters, the food was new to him and he found it really hard it eat outside. Especially since he was a student and a vegetarian. He found that all he could get was salads and he hated it. He used to wonder how people just ate a bowl full of greens. But he had been eating it without the dressing 🙂 He did not know back then, that a good dressing goes a long way in making a bowl full of greens interesting. Well, he loves salads now and would gladly eat a good salad anytime of the day 🙂

Easy and delicious chickpeas and  raw mango salad with orange dressing

Ingredients
Salad Dressing
  • Juice from 1 orange
  • 1/8 tsp garlic powder
  • 1/2 tbsp brown sugar or sweetner of your choice
  • 1/2 tbsp nutritional yeast
  • 21/2 tbsp extra virgin olive oil
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • Juice from 1/2 lemon
For the salad
  • 1 cup cooked chickpea/ channa
  • 1/2 green apple diced
  • 1/2 raw mango diced
  • 1 tsp chia seeds
  • 1/2 cup tightly packed spinach / or greens of your choice
  • 2 tbsp toasted walnuts
  • 1/4 cup raspberries (can use berries of your choice)
Instructions
  1. Add all the ingredients for the dressing in a jar with a lid. Close the lid and shake well until everything is well combined. Refrigerate it for atleast 30 minutes before serving.

  2. Toss all the ingredients for the salad in a deep bowl and add the dressing over it. Mix everything well and serve.

Recipe Notes

* Can substitute raw moangoes with more green apples and vise versa.
