South Indian style green beans stir fry with coconut, green chillies and cilantro. Can be served as a side with rice / rotis.

Ingredients
  • 3 cups chopped beans
  • 4 tbsp grated coconut
  • 2 to 4 green chillies ( use as per your spice levels)
  • 1/2 cup tightly packed cilantro/ coriander leaves
  • 1 tsp urad dal
  • 1/2 tsp mustard seeds
  • a fat pinch asafoetida
  • 1/4 tsp turmeric powder
  • 1 tbsp oil (coconut/ sesame or peanut oil)
  • 1 tsp salt or to taste
Instructions
  1. Make a somewhat smooth paste of the coconut, green chillies and cilantro and set it aside. You can also use the stalks of the cilantro to make the paste.

  2. Heat an iron pan or a non stick pan and add the oil. I prefer to use coconut or sesame oil. When the oil heats up, add the mustard seeds, urad dal and asafoetida. Let the mustard seeds splutter.

  3. Then add the chopped beans, salt, turmeric powder and saute in medium high flame until the beans are cooked. I sprinkle water as necessary and close the lid for 5 to 6 minutes to cook the beans.

  4. When the beans become soft, add the ground mixture and give it a mix. Let it cook for a minute and switch off.

  5. Beans thoran / poriyal are ready to be served with rice / rotis

Recipe Notes

I would strongly suggest using green chillies for this recipe. Green chillies with cilantro gives a beautiful flavor.
