Here’s another super simple that you can make this Diwali. These No bake Date Nuts & Rose energy balls are ridiculously simple and can be done in less than 15 minutes. They are super healthy, refined sugar free, vegan and has all the good stuff.
I am not kidding when I say they are so simple to make. All you need is a good food processor and 15 minutes of your time. Keep all the ingredients ready and you will have a delicious guilt free dessert in no time. The rose water/ rose petals gives it a sweet and fragrant smell that makes it so festive.
You do not have to wait until Diwali to make this. They are great for snacking and if you shell out money to buy energy bars every week, you might want to reconsider it and try doing it at home. When you make it at home, you have control of what goes inside and you can play with the ingredients as you wish.
These No bake Date Nuts & Rose energy balls pack well in lunch boxes and are perfect for after school snacking for your little ones at home. And as the name suggests, they are great as a pre work out snack too.
I have used nuts like almonds and cashew in it. You could additionally add walnuts, pistachios, flax seeds, hemp seeds. Add some cacao powder to give it a chocolatey flavor. There are just so many flavorings you could add to it. For now, lets keep it simple and festive with some rose water! I luckily found a big bag of dried rose petals in our Indian store. For those who cant find them, just omit them and add vanilla essence or cinammon powder/ elaichi powder to flavour the energy balls.
A simple no bake vegan dessert with cashews, almonds, coconut flakes and rose petals. They are great for snacking for kids and adults alike.
Soak the dates in hot water for 15 to 20 minutes.
Add the dates, coconut flakes, almond meal, nuts, rose water, rose petals to a food processor and blend everything until they are smooth and sticky.
Check the mixture to see if they are sweet enough. If not add more dates or maple syrup or coconut sugar. (Can add 1/4 cup coarsely chopped nuts at this stage for some texture. But it is totally optional)
Make small balls from the dough and roll them in powdered rose petals or finely chopped nuts or even cocco powder.
Store it in an air tight container.
Instead of just cashews and almonds, you could add pistachios and walnuts too. Just adjust the propotion so that you get 1 cup of nuts totally.
