Here’s an easy pizza recipe that you can make when you suddenly want to eat pizza but do not have the pizza dough on hand. While you could always go to the store and get a ready made pizza dough, or you could do something like a naan pizza or flatbread pizza, this here is something that you can whip up easily at home. All you need is some regular chapati dough, paratha stuffing of your choice (I made this with aloo paratha filling) and you can get creative with the toppings and pizza sauce.When I had decided to make paratha for dinner, my little one wanted pizza. Going out to get a vegan pizza from some place was not an option as we were pretty tired, so I made up this recipe to satisfy my little one. I used the sundried tomato pesto that I had made over the weekend as the spread and kept the toppings simple with some sauteed onions and zucchini ( just vegan cheese for the little one) After a couple of experiments with regards to the bake time, I ended up with beautifully crispy and perfect thin crust pizza. A friend of ours dropped home suddenly and I gave him a taste of this. He said he couldn’t even tell that this was actually a paratha and it was pretty close to a thin crust pizza. Needless to say, it was a big hit with my little one as well. 🙂
I haven’t experimented with a really wet sauce (like marinara) on this pizza. I will update the recipe with the results once I try that. But this works beautifully with a pesto. If you want to give it an Indian twist to it, you could use some green chutney or tamarind chutney and use paneer, veggies as toppings!! Make paratha as per the instructions given in the link ( Do not cook the parathas in the tawa. Roll the paratha and proceed below) I made these with Aloo paratha. You could try my gobi (cauliflower) paratha or any paratha of your choice.
Method:
Preheat your oven to 475 F
Once you roll out your paratha, take some pesto/ chutney and apply on one side of the paratha as you would to a pizza base.
Add toppings of your choice ( Use sauteed veggies as you will not be cooking the pizza for a long time and raw veggies might not have enough time to get cooked)
Add grated cheese and place the pizza in a pizza pan and bake your pizza for 7 to 8 minutes.
After 7 to 8 minutes, take the pizza out and season it with some Italian herbs and red pepper flakes. Use a pizza cutter or knife to cut it into slices and serve hot 🙂
- Store bought or home made pesto / or any chutney of your choice
- Parathas Aloo/ gobi or mixed veg paratha
- sauteed veggies of your choice for toppings
- vegan cheese Use regular cheese if not vegan
- Italian seasoning as needed
- Red pepper flakes optional
