Delicious and Healthy Oatmeal Soup Recipe

Looking for new ways to include oatmeal in your everyday menu? This Delicious and healthy oatmeal soup recipe is the perfect way to start off your day with something savory and healthy!

We often associate oats with something sweet and while they are delicious, my favorite is this savory oatmeal. You could call it oats soup if you may, or a savory oatmeal porridge. Whatever you wish to call it, this savory oatmeal is a great recipe to have for a quick breakfast or on a busy weeknight for dinner.

I am not a big fan of oats. I can have the occasional cinnamon or vanilla flavored oatmeal with fruits , granola and all the fancy toppings that make it so colorful and delicious once in a while. I am a savory breakfast person. Sweet stuff like pancakes, waffles, or sweet oats porridge is strictly a weekend thing for me. I prefer to start my day with the traditional idli/ dosas or avocado toast / smoothies. So overnight oats or chia pudding is not something I make often and we hardly ever have cereals. They are strictly for emergencies.

This savory oatmeal soup recipe is one of the few oatmeal recipes I love. Mildly flavored and light, it is great dish for the little one’s at home too. You can get some extra servings of veggies into them 🙂

Can you make this oatmeal soup recipe with steel cut oats?

Yes, of course. But since they take longer to cook, I have not tried it with steel cut oats. I did not want to over cook the veggies. But if you do not mind a mushy oatmeal, by all means use steel cut oats. Please adjust the cooking time accordingly.

Can I serve this savory oatmeal as a soup?

Most definitely! I call this oatmeal soup. Infact you could blend everything using a blender and make this into a thick creamy soup. I used to do that for my little one. Or you could just serve it as such. Dilute as needed to make it into a soup.

Is this oatmeal soup recipe vegan?

You can just use plant based milk instead of regular milk for a vegan version. I have tried both and they both taste equally good.

This oatmeal recipe is quite simple. I used my instant pot to make this today. But I have made the stovetop version many times before I got my Instant pot.

Savory oatmeal porridge / soup with veggies, milk and herbs

Ingredients
  • 1/2 cup old fashioned oatmeal
  • 1 cup chooped mixed veggies (Beans, capsicum, carrots, peas, corn)
  • 1/4 cup onion chopped
  • 3 cloves of garlic chopped finely
  • 1 bayleaf
  • 2 or 3 spring onions (white and green part chopped)
  • 1/3 tsp italian seasoning (or use seasoning of your choice)
  • a pinch of nutmeg
  • 11/2 cups milk of your choice
  • 1 cups water
  • 1 tbsp olive oil / avocado oil
  • 1/4 tsp sugar
  • salt as needed
  • chilli flakes and cheese / nutritional yeast (optional)
Instructions
Instant pot method:
  1. Switch on the saute mode in your instant pot and add the oil. When it heats up add the bayleaf, garlic, onions, white part of spring onions and saute until the onions turn translucent.

  2. Now add the chopped veggies ( I used frozen mixed veggies), salt as needed and mix.

  3. Add the oats, 1 cup water, the italian seasoning and cook on manual mode for 6 minutes.

  4. Release pressure after 5 to 6 minutes. Open up add mix the milk, nutmeg, sugar, geen part of spring onions and adjust salt as needed. Add as much as milk as needed to make it thick or runny. I added the amount mentioned to make it into a soupy consistency.

  5. Serve as such or with a sprinkle of chilli flakes or cheese.

Stove top method:
  1. In a deep pan add oil and bay leaf, chopped garlic, onions and white part of spring onions and saute until the onions turn translucent.

  2. Now add the veggies and saute for couple of minutes. Do not over cook them.

  3. Next add the oats, 1/2 cup water, 1 cup milk (or more) salt, sugar, italian seasoning and cook them in a low medium flame until the oats are cooked.

  4. When the oats are done, switch off and serve garnished with spring onion greens, a pinch of nutmeg and a sprinkle of cheese (optional)

Recipe Notes
  • I like to add bell peppers to this recipe as it lends a nice flavor.
  • You can blend everything using a hand blender when it is cooked to make it creamy.
  • Use seasonings of your choice. You can also use fresh herbs instead of dried ones.
