Sugar snap peas is one vegetable that tastes delicious all by itself. The slight sweetness, a little bit of crunchiness makes this it a great snack for both kids and adults
You could dip it in some creamy hummus or some fresh avocado dip to make it extra special. But I don’t need a dip or side to go with it. A sprinkle of salt is more than enough and I can happily munch on bowl full of these beauties anytime of the day.
Did you know sugar snap peas are rich in vitamins and minerals? They are also low in calories making them the perfect snack for you to indulge in. As a rule, I tend to try and add as much as green vegetables in my diet as possible.
Luckily, I love anything green and my hope is one day my little one will try and eat as much as veggies as me and hubby do. I try and introduce all kinds of veggies in her diet. Fruits and vegetables are part of her everyday snacks whether she likes it or not. The hope is eventually she will learn to eat them one day. Her likes and dislikes keep evolving and right now she likes raw carrots, baked cauliflowers, broccoli and potatoes. She loved green peas in the past and hated broccoli. Since she changes her mind so often, I just include all the veggies often for her to get used to it.
Now this instant pot sugar snap peas is a perfect snack for your little one’s lunch box. Kids love the crisp texture and the slight sweetness. Peanuts and pumpkin seeds provide some extra crunch and texture, the raisins add more sweetness and the lemon juice gives it a kick! Or you could juts serve it as it is with just a sprinkle of salt and pepper.

Sugar snap peas cooked to perfection in the instant pot topped with sesame seeds, peanuts and lemon juice
Add the olive oil, 1/8 cup water, sugar snap peas, salt, black pepper as needed to your instant pot.
Cook on manual high for 0 (ZERO) minutes and release pressure immediately.
While they are cooking, roast the ingredients for topping until you get a nice aroma (peanuts,seasme, pumpkin seeeds) Crush the peanuts using a mortar and pestle or a processor coarsely.
Sprinkle the crushed peanuts, sesame seeds, pumpkin seeds, garlic powder, raisins, lemon juice on the sugar snap peas and serve.
Heat a pan and add the olive oil. When it becomes hot, add the sugar snap peas, salt and pepper as needed. Saute in high heat for 1 or 2 minutes and set it aside. Make sure they are still crisp.
In another pan, roast the peanuts, seasme, pumpkin seeeds for a minute or so. Crush the peanuts coarsely.
Top the sugar snap peas with crushed peanuts, sesame seeds, pumpkin seeds, garlic powder, raisins, lemon juice and serve.
