I love pineapple in savory dishes. While some people hate it, pineapple in pizzas is a must for me. I remember going to some hill station with our friends when I was a kid for a holiday and one of my friend’s dad introduced pineapple paired with cheese and I fell in love with it. Since then it is one of my favorite ways of eating it. The key is to balance the pineapple with adequate savory tones (cheese, spices). Too much of pineapple and you end up spoiling the dish!

Pineapple in Chineese fried is a popular combination. I have been wanting to giving it a try at home for somethime now and when I found some beautiful fresh pineapple in the market, I knew I had to try it. I wanted it to be spicy and sweet, so instead of the usual Indo Chinese fried rice, I decided to do a chilli garlic version and added pineapples in it. It went very well with the dish and RB gave a thumbs up!!
The key to any good fried rice is to have cold cooked rice. If you want to make this recipe, use previous day’s rice or make some rice the previous day and refrigerate it. With some precooked rice and chopped frozen veggies, you will have this dish ready in no time. I like to chop the veggies, the previous night, put in a zip lock and freeze them. It saves time and makes cooking a breeze
Spicy and sweet fried rice made with chilli garlic sauce and pineapples.
Cook the rice with 13/4 cups of water in the Instant pot in rice mode and let it cool.
Chop the veggies and keep it ready.
Switch on the saute mode (high) in your Instant pot and add the oil. Let the oil become hot. Then add the ginger, garlic and fry until the they start turning golden.
Now add the white part of the spring onions, red chilly and saute for a minute.
Add the chopped veggies, soy sauce, chill garlic sauce, salt, sugar, pepper and saute for 2 to 3 minutes until the vegetables are halfway cooked. The vegetables need to have a bite in them.
Now add the cooked rice, pineapple and give everything a mix. Saute the rice for couple of minutes. It is nice to have some fried/ brown bits at the bottom of the pan.
When your instant pot pineapple fried rice is done, switch off and garnish with green part of the spring onions.

I think you should clarify making the rice the day before, not just putting the already cooked rice and water in the instant pot first. After an initial disastrous trial run I realized that’s what you’re suggesting. Or skip that as the first step in the directions. Otherwise tastes great once properly made!
