Here’s an easy and simple Instant pot potato and cauliflower  pulav that is mild and fragrant. This is one of my little one’s favorite dishes. It has two of her favorite vegetables ( cauliflower and potato ). This pulav is comforting and mildly spiced. It is my go to recipe during the weekends when I have to cook something real quick and go outside rather than spend time in the kitchen. 

She is in a stage where she does not like to eat mushy rice so I try and get her to eat rice like this. I sometimes pack this instant pot potato and cauliflower pulav for my little one’s lunch box and she loves it.

You can add extra veggies like carrots/ beans/ corn / brocolli or peas to make it more colorful and nutritious for the little ones and it is a great way of getting them to eat more veggies. Serve this instant pot potato and cauliflower pulav with some spicy gravy/ salna or a tangy raita for the adults. The little ones will devour this as is.

Don’t have the whole spices mentioned in the recipe??

No worries, you could just add garam masala powder (store bought or homemade) whatever you have at hand and proceed with the recipe. I would increase the quantity of the garam masala to 1/2 tsp instead of 1/4 tsp as mentioned in the recipe if you are skipping the whole spices.

Potato and Cauliflower pulav

A fragrant and mild rice made with cauliflower and peas which goes well with a spicy gravy

Ingredients
Ingredients:
  • 11/2 cups basmati rice
  • 2 small potatoes cubed in small pieces
  • 10 to 12 cauliflower florets
  • 1/3 cup green peas
  • 1 onion sliced thinly
  • 3 to 4 tablespoons chopped mint leaves
  • 21/4 cup coconut milk thin milk
  • 1/4 tsp garam masala
  • 1 inch cinnamon piece
  • 3 cloves
  • 1 badi elaichi
  • 1 green elaichi / green cardamom
  • 2 bay leaf
  • 11/2 tbsp olive oil
  • salt to taste
To be ground:
  • 1 tsp fennel seeds
  • 2 garlic cloves
  • 1 inch piece ginger
  • 2 to 3 green chilies as per spice levels
  • 11/2 tbsp coriander leaves
Instructions
Method:
  1. Soak the basmati rice for 30 minutes in water.

  2. Switch on the saute mode and add oil. When the oil becomes hot, add the spices (cinnamon, cardamom, bay leaf, cloves) and saute for a few seconds.
  3. Grind the ingredients mentioned under to be ground into a smooth paste with little water. ( fennel, garlic, ginger, green chilly and coriander leaves)
  4. Now add the onions to the IP and saute until they are soft and translucent.
  5. When the onions become soft, add the ground paste and saute for couple of minutes. Then add the chopped veggies, basmati rice, salt to taste and mix everything well. Switch off the saute mode.
  6. Add the coconut milk, chopped mint leaves, garam masala and mix well. Close the lid and cook in manual high pressure for 6 minutes and release pressure after 6 minutes.
  7. Easy and yummy pulav ready. Serve it with some spicy gravy/ salna/ raita.
