A nutritious breakfast is a great way to start your day on the right foot and this recipe will help you do just that! This is one of those recipes that you can make ahead the previous night, pop it in the fridge and eat the next day. Works perfectly for working women and for others who wake up late. Yea, I fall in the second category! Most of you would be familiar with the nutritional benefits of oats and blueberries. But the interesting and highly nutritious ingredient in this recipe is chia seeds. Chia seeds are tiny edible seeds, that are loaded with vitamins, protein, fiber, calcium and antioxidants. They are kinda like magic seeds for they become gel like when they are immersed in liquid. Whenever I immerse chia in water, it reminds me of bubble tea:) Since they do not have much of a taste on their own you can add them to almost most of the food/drinks you have.

Boil milk in a sauce pan, and when it starts boiling add oats and cook until it becomes soft. Add the sweetener of your choice (Sugar, honey or maple syrup) and vanilla essence to the oats mixture and mix well. Set aside 1/4th of the oats/milk mixture. Add 1/2 of the chia seeds to the rest of the oats mixture and let it rest.
In a blender add banana, blueberries (reserving few to be used as toppings) and 1/4th of the oats/milk mixture and blend. Add rest of the chia seeds chia seeds to the blended mixture. Let both the mixtures rest for 10 mins or so for the chia seeds to become gelatinous.
In a glass/bowl, add your oats vanilla mixture and the blueberry mixture on top and pop it in the fridge!
You will have a thick pudding like mixture the next day!! Serve topped with blueberries and a drizzle of honey 🙂

I made the same with some strawberries and blueberries. It’s become one of our a favorite breakfasts 🙂
Note:
If you do not want to go all this trouble. Just blend blueberries and banana and mix with the oats. Add chia seeds to it and eat it after 10-15 minutes. Or you could refrigerate it and have them the next day like I did!
You can incorporate any fruit of your choice.
