Museli is a popular breakfast cereal that contains oats, dried fruits, nuts and whole grains. This cookie recipe uses museli in it. So yes, it is healthy if you are ready to ignore the small amount of butter that goes into it! And my favorite part of this recipe is that it is eggless 🙂 I ended up eating a lot of the batter even before I could bake it:)
Ingredients:
Makes about 12-14 small cookies
Method:
Mix flour, museli, almond meal, salt, baking soda in a bowl
Beat sugar (white and turbinado sugar), melted butter, vanilla essence, curd until they are well combined.
Add the dry ingredients to the wet ingredients and mix well using a spatula. The batter will be little dry. Add a tbsp of milk and mix until they are well combined. (The batter will resemble a dough)
Preheat the oven to 350 F.
Make balls of the batter and flatten it a little. (They do not spread a lot while baking) I used a tbsp of dough to make a ball.
Bake the cookies for 12-13 minutes or until they start browning.
Cool them completely before you transfer them to an air tight container 🙂
